Who does not like a yummy main dish smothered with white wine (our fave!), garlic, onion, parsley, and the big kahuna, butter!  Let’s face it, everything is better with butter and bacon!

Okay, so back to the recipe…  This recipe is from Corrie, our talented Fashion Consultant/ Stylist (and professional bra fitter!) who is an amazing cook and loves to share her recipes with us. Corrie is like Wonder Woman;  raising younger kids, cooking great meals (after working tons of hours!)  but always being the ultimate professional and someone you can trust to make you look fabulous!

We’ve got Corrie’s secret recipe (which obviously is not a secret anymore) and we know you will love this light and easy recipe for the warmer weather!  Do you have a fabulous recipe you would like to share?

Ingredients

  • 1-1/2 sticks of butter
  • 5 garlic cloves, minced
  • 1/2 large sweet onion, chopped
  • 1/2 cup fresh parsley, chopped
  • 1-1/4 cups white wine
  • 1/4 cup lemon juice
  • 1-1/2  pounds large, raw, cleaned (and de-veined ) shrimp
  • Salt and pepper to taste
  • Parmesan Cheese (for topping)
  • Bread Crumbs (for topping)
  • 1 pound thin spaghetti

Here’s The Scoop:

  1.  In a saucepan over medium low heat, saute onion and garlic in the butter until onion and garlic is soft.  Add the rest of the ingredients, except shrimp.
  2. Pour into a glass baking dish.  Add the raw, cleaned shrimp.  Cook at 350 degrees for 10 minutes uncovered.
  3. Take out of oven and sprinkle with parmesan cheese and bread crumbs and return to oven for 10 more minutes.

NOTE:  In the mean time… during the 10 minutes cooking time for the shrimp, cook 1 pound of thin spaghetti, drain and then pour shrimp mixture from oven over pasta and toss.  Serve with a delicious salad and garlic bread!   Yum, Yum!
